There is one exception. Self-rising flour. If your recipe calls for baking soda and you have self-rising flour (which already has baking powder), you can cheat. Just leave out any extra baking soda. The flour already has the magic built in. But don’t try this with biscuits—you’ll get a dense hockey puck. Trust me, I’ve cried over a hockey puck.

Also, buttermilk recipes are a special case. They love baking soda because the buttermilk is acidic. If you swap in baking powder, you’ll lose that tangy lift. Your pancakes will be pale and sad. Don’t do it. Keep the soda. Pour the buttermilk. Be happy.

A Quick Rule of Thumb (For Your Phone’s Notes)

Write this down. Or just remember it: Baking soda = needs acid. Baking powder = has acid. If you’re out of one, don’t swap unless you’re prepared to adjust the acid. And even then, lower your expectations. Baking is chemistry, not wishful thinking.

And for crying out loud, check the expiration dates. Expired baking powder is a lie. It won’t foam. It won’t lift. You’ll bake a brick and wonder why. Spoiler: it’s the powder. Not your skills. Your skills are fine. You’re a star.
