First, bring 1 cup of water or milk (or a mix—live dangerously!) to a boil. I usually use the microwave for the water, but the stovetop feels more authentic. Add a pinch of salt—it’s not optional, it’s the law of deliciousness.
Pour in 1/2 cup of rolled oats. Stir it once. Lower the heat to a simmer. Don’t let it volcano over your stove; nobody needs that drama at 7 a.m.
Let it bubble away for 5 to 10 minutes, stirring occasionally. You’re not making concrete, so keep an eye on it. When it looks like a thick, happy porridge, you’re done.
Microwave Method: For the Brave and Impatient
If you’re in a hurry (or just lazy, like me), the microwave is your bestie. Combine 1/2 cup oats and 1 cup liquid in a big bowl—bigger than you think. Oats expand like they’re trying to escape.
Microwave on high for 2 to 3 minutes. Stop, stir, and check. If it’s too runny, give it 30 more seconds. Trust me, 3 minutes is usually the sweet spot.
Warning: watch the bowl. It will get volcanic if you overfill. I once cleaned oatmeal off the microwave ceiling. You’ve been warned.
